Six steps from
discovery to decision.

Every establishment is judged against what it promises within its own category, price, location and context. A hawker stall does not need to resemble a fine-dining room to be exceptional.

Discovery & nomination

A place may be discovered by TARAF, nominated by diners, or brought forward by the food community. A nomination is an invitation to look—not a promise of recognition.

Eligibility & conflict review

We confirm the establishment, location, category and inspection context. Any relationship that could affect judgement is declared and managed before assessment.

Anonymous inspection

Inspectors visit without announcing themselves, order normally and pay the full bill. The visit is judged as a diner experiences it, not as a staged presentation.

Repeat visits & evidence

Higher distinctions require repeated observations across different services. Inspectors record food, craft, identity, hospitality, value and consistency within context.

Human council decision

Written evidence is discussed by a human council. AI may organise research or help surface patterns; it never tastes food, scores a restaurant or decides an award.

Annual publication

Every distinction belongs to a specific location and edition. It is renewed, changed, suspended or removed when the current evidence no longer supports it.

Does the establishment understand where it is and what its setting means?

CHARACTER

Does it have a point of view that feels considered and genuinely its own?

CRAFT

Is the food made with command, care and respect for the ingredients?

CONSISTENCY

Does the experience hold across time, service and the promises made?

HOSPITALITY

Does the whole visit honour the guest, from welcome to farewell?

CONTEXT

Is the judgement fair to the category, price and realities of the establishment?

TARAF may use technology to organise public information, support consistency and help the editorial team see patterns across a growing national directory. But awards remain a human responsibility. No algorithm tastes a dish, understands a family recipe or carries the accountability of a public decision.

The annual principle

A Kantan is not
an heirloom without review.

Restaurants may keep the physical sculpture as part of their history, but the public record always identifies the edition and current status. A distinction can be renewed, changed, suspended or removed. This protects the restaurant, the diner and the meaning of the object.
